Tunisian Tomato

Harissa paste, made from chillies brought to Tunisia in the 15th century along the ancient trade routes, became immediately popular in many Middle-Eastern countries. We make our harissa (actually a Tunisian harous) in a way that harks right back to its origins: smoky, salty and hot- a far cry from the sweet pepper based pastes that grace UK supermarket shelves. In this soup the paste adds an earthy heat to oven roasted tomatoes and peppers. The soup is finished with chickpeas, a staple of the Middle East.
