Popular across Laos, this fragrant coconut and galangal broth is salty, sour and spicy. Tom Kha translates literally as Galangal Broth. It may seem surprising to see dill used, given its reputation as a European herb, but it was brought over with French colonists and quickly adopted into the local cuisine. This soup, therefore, represents the wonderful diversity of Laos as a country, as well as the careful balance of flavours in its food.
