Caribbean Jerk

This is a soup based on the Caribbean staple: rice and peas. We make our own jerk paste using traditional ingredients, and then smoke it over oak chips to get that wonderful barbecue flavour so typical of West Indian cookery. We then add coconut milk for richness and roasted tomatoes for sweetness, along with a squeeze of lime and a few thyme leaves to finish our unique and delicious Caribbean soup.
